GARLIC & LEMON BRUSCHETTA
Bruschetta is super quick to make which is ideal when you’re in rush or can’t be bothered cooking, and yes even I have those days! It’s super delicious, so no one will ever know it’s Low-FODMAP.
1 large slice of Sonoma Spelt Sourdough (or brand of your choice)
1/2 small cucumber, chopped into small pieces
1/2 tomato, chopped into small pieces
1 tsp garlic-infused olive oil (I use Cobram Estate)
a handful of fresh basil leaves
salt & pepper, to season
lemon wedge, to serve
- Toast the sourdough slice until lightly browned.
- Place toast on a plate and top with chopped tomato, cucumber and basil leaves. Drizzle with the oil and season to taste. Serve with a lemon wedge and enjoy!
